Sweet potato boat

Sweet potatoes are one of the most nutritious starch-rich foods out there.

Baking doesn't only bring out the sweet potato's flavor, but also its green buddy broccoli's.

You don't like broccoli?

Well, you haven't tasted baked broccoli yet then!

Topped off with a cocktail of healthy fats and protein further complete the flavors and nutrition content.

Ingredients for 1 serving:

  • 1 sweet potato

  • 1 handful of broccoli florets

  • 1 serving of Special Peanut Sauce 
    Creamy Tomato Almond Sauce which is coming soon.

*=An exact time is hard to give, because it depends on the size of the sweet potato. But no worries!

it doesn't come down to the minute. It's hard to completely mess up.

Just don't plan on leaving the house while they're baking.😱


  1. Take a sweet potato

  2. Slice it down the length, but not all the way through; you don't want 2 separate pieces.

  3. Put potato in a pre-heated oven on 230 °C  or 450 °F and bake for 20-40 minutes*

  4. While potatoes are baking, prepare broccoli florets, Cut the broccoli florets. Don't cut them too big or they won't fit in your potato boat. 

  5. Prepare your delicious sauce, if you have not done so already.

  6. Prepare to check if potatoes are ready for receiving broccoli magic.

  7. Open the oven.

  8. Don't burn your face.

  9. Poke the potato with a fork. You should be able to poke through the center of the potato without too much force. It doesn't have to be mush at this stage but somewhat soft at least.

  10. If ready, take out the potato.

  11. Wear an oven glove, unless you want to burn your hand.

  12. Place broccoli florets inside the boat. 

  13. Place it back in the oven.

  14. Bake for 20 more minutes.

  15. After 20 minutes use a fork again to check if potato is mushy enough inside.

  16. If so, take out potato and serve on a plate.

  17. Drizzle the sauce over your magic boat.

  18. Eat potato with or without skin (unless some skin turned black🤭).
