For those who love healthy apple pies!

This recipe is made for a 17/18 cm/ 7 inch apple pie tin.

INGREDIENTS pie bottom:

  • 50 g sunflower seeds-

  • 50 g cashews

  • 100 g dates

INGREDIENTS pie center:


  • 2 Medium sized apples (or pears in case you are allergic orhave an aversion towards apples:P)

  • 150 g dates

  • 80 g walnuts

  • 80 g raisins

  • 80 g flaxseed meal (blended flax seeds)

  • 80 g water

  • 60 g whole meal corn flour (NOT corn starch)

  • 1 tsp cinnamon

  • Optional: 1 tsp of Baking powder

INGREDIENTS pie topping:


  • 1 to 2 apples

  • Flaxseed meal or cinnamon

  • Optional: walnuts



  • Sunflower seeds and cashews could be swapped for almonds, pecans, walnuts, or macadamia nuts.

  • Corn flour is of yellow color and wholesome, corn starch is
    white and refined. You could replace the corn flour with other flours if you prefer.



  • Cover the bottom of the tin with parchment paper.

  • Blend cashews and sunflower seeds into small particles.

  • Add dates and blend until a mass has formed (doesn’t need to be a fine paste).

  • Knead the mass until it stops crumbling (may need to add a few sprinkles of water).

  • Use a spoon to spread it out evenly over the tin bottom.




  • Cut parchment paper in the same size as the tin, but leave one piece sticking out as seen in the picture, so you can pull it off the tin bottom easily after baking.

  • Moisten the bottom of your spoon to prevent it sticking to the dough.


  • Cut up 1 apple and add it to a blender with the water.

  • Blend apple before adding dates and blend until no more big pieces are left.

  • Add apple/date mixture to a bowl.

  • Add flaxseed meal, stir and wait for 2 minutes.

  • Add corn flour.

  • Add baking powder if so desired here.

  • Add raisins and crushed walnuts.

  • Add other apple, cut up into pieces.

  • Add cinnamon.

  • Mix ingredients well.

  • Add mixture to the pie tin and spread out evenly.



You can add more apple to the mixture if you don’t feel it’s enough for you.



  • Slice up the apple and lay the slices on top.

  • Add extra decoration to your liking, eg: walnuts.

  • Sprinkle flaxseed meal or cinnamon on top.


  • Preheat oven to  180 °C / 360 °F.

  • Bake for about 45 minutes.
